Belyov pastila: the sweet heritage of the Tula land

пастила

When it comes to the famous delicacies of the Tula region, not only gingerbread comes to mind. Another exquisite treat is created here – Belyov pastila. This treat has become a real gem of Russian traditional sweets  thanks to its unique flavour and rich history.

The past with apple flavour

Belyov pastila has deep roots going back to the distant past. Its recipes were handed down from generation to generation, and today this delicacy is known far beyond the borders of Russia. In the 19th century merchant Amvrosiy Prokhorov made Belyov pastila famous. High dignitaries of France, Spain, Italy, Bulgaria and Georgia enjoyed this delicacy.

Modern manufacturers, ‘Belevskaya Pastilna Manufactory’, have preserved and revived the ancient recipe, following the traditions. An important aspect of Belyov pastila preparation is the manual cooking process. Apples are baked in the oven on copper baking trays, then the pulp is separated by beating it with icing sugar and egg white. The resulting mixture is spread out on trays, baked, then join the layers, smeared with egg white, and sent to dry. After 8 hours the pastila is ready.

Flavour and benefits

Belyov pastila has a delicate texture and pleasant apple aftertaste. It is made exclusively from natural ingredients without colouring agents and preservatives, which makes it healthy and safe. The apples from which the marshmallow is made are rich in vitamins and minerals to promote good health.

Variety of flavours

Today Belyov pastila is presented in different variants: traditional apple pastila, with the addition of berries and other fruits, in the form of bars and desserts. Each of these varieties retains the basic principles of preparation and natural composition.

The uniqueness of Belyov pastila lies in its recipe and manual process of preparation. This treat will appeal to children, gourmets and connoisseurs of healthy eating who prefer natural products,

Traditions of flavour

It is interesting that in different countries Belyov pastila was served in different ways. In Russia it was eaten with warm milk or tea, with mead or wine. In France it was served with white wine and champagne, in England – with whipped cream and coffee, in Spain – with mandarin jelly.
