The smoking box in detail:

How does the SMAK smoke box work?
Our smoking box has the following dimensions: 520x300x310mm. To produce the right amount of hot smoke, it is best to use wood shavings or sawdust from deciduous and fruit trees such as oak, birch, alder, beech, apple tree or cherry.A layer of wood shavings is scattered on the bottom of the stainless steel box. A special tray is placed on top to collect the fat. This is necessary because the meat produces juices and fats when heated, which must not fall onto the wood chips.
Next, the stainless steel grate is installed and the smoked food - ham, sausage, meat, cheese or fish, etc. - is hung or placed on it.
All of this is covered by a specially shaped lid and sealed by a hydro seal, which is filled with water. This prevents the smoke from escaping to the outside. This simple method is called a water border.
A hose is then attached to the special connection in the lid to drain off the excess smoke. If necessary, it can be taken outside or into the ventilation system. The smoke box is then placed on an open fire or other heat source. The heating of the base should preferably be evenly distributed and the temperature should be controlled by a pre-installed thermometer. The chips should not burn!
