The smoking box in detail:

How does the SMAK smoke box work?
Our smoke box has the following dimensions: 520x300x310mm. To create the right amount of hot smoke, it is best to use wood chips or sawdust from deciduous and fruit trees such as oak, birch, alder, beech, apple tree or cherry.A layer of wood chips is scattered on the bottom of the stainless steel box. On top of it is placed a special tray for fat collection. This is necessary because the meat produces juices and fats when heated, which should not fall on the wood chips.
Next, the stainless steel grate is installed and the smoked product such as ham, sausage, meat, cheese or fish, etc. - hung or placed on it.
All this is covered by a specially shaped lid and sealed by a hydro closure, which is filled with water. This prevents the smoke from escaping to the outside. This simple method is called water border.
Then a hose is put on the special connector in the lid to drain the excess smoke. If necessary, it can be taken outside or into the ventilation system. The smoker box is then placed on an open fire or other heat source. It is best to distribute the heating of the bottom evenly, and the temperature should be controlled by a thermometer already installed. The chips should not burn!
