- Hold the knife with your right hand and the sharpening steel with your left hand and place the tip of the sharpening steel on the table.
- Hold the sharpening steel strictly vertically and the knife blade at the desired sharpening angle. Alternatively, the sharpening steel can also be tilted vertically and the knife held strictly upright. In both cases, the recommended sharpening angle of the cutting edge for this type of knife must be maintained (20-25 degrees).
- Place the heel of the knife at the very top of the sharpening steel and guide the entire edge of the knife down along the sharpening steel so that the tip of the knife is at the very bottom of the sharpening steel. In this way, the hand with the knife slides down the shaft of the sharpening steel.
- Make sure that the knife blade does not touch the table - you need a long sharpening steel to sharpen a large knife. Ideally, the length of the sharpening steel should be one and a half times the length of the knife blade, or at least 5 cm longer.
- Do not guide the knife back upwards on the sharpening steel! Pull the blade away from the surface of the sharpening steel, move the knife upwards and do the same action, but with the other side of the blade.
Note:
A ceramic knife must not be sharpened with a sharpening steel - the steel is too hard for the blade.The angle between the sharpening rod and the knife should not be too large, maintain an angle of cs. 20-25 degrees. Keep stable while sharpening.
It isimportant that you make all movements evenly and at the same angle, otherwise the knife will become even blunter!
